Thekua (also known as khajuria or thikari) is a traditional, deep-fried sweet snack from the Indian state of Bihar, widely popular in Jharkhand and eastern Uttar Pradesh. It is a firm, cookie-like treat known for its rustic texture, a crispy exterior, and a so), mildly sweet interior.

  1. Ingredients: Traditionally made with whole wheat flour (atta), jaggery (gur), and ghee (clarified butter). Flavour enhancers like fennel seeds (saunf), cardamom powder, and grated coconut DRY FRUIT are often added.
  2. Preparation: A stiff dough is prepared and then pressed into a flat, disc-like shape, often using special decorative wooden Molds called Sancha to create intricate patterns. These discs are then deep-fried in ghee or oil over a low-medium flame until they turn golden brown.
  3. Texture and Taste: The use of jaggery and a stiff dough gives Thekua a unique, wholesome, and earthy sweetness. It is so) when hot, but hardens into a firm, crunchy cookie as it cools.
